This summer I'm going to make an effort to drink more tequila. I'm bored of having it in a sugary margarita and I need something more. I had 2 perfectly ripe peaches on the counter and it was close to 100 degrees last weekend, so...what to do, what to do but make a summer lemonade. I unearthed my trusty 80oz pitcher and experimented with things I had on hand. For something stupidly simple and a good reason to crack the new bottle of Grand Marnier in my liquor cabinet, I was very pleased with the end result. Summer heat can bite me.
2 fresh peaches (diced)
12 oz tequila (I used El Padrino Blanco)
6 oz Grand Marnier
28 oz lemonade (I used Santa Cruz for its low but natural sugar)
15-20 torn mint leaves
Put diced peaches in a large pitcher, add tequila, Grand Marnier, lemonade and mint leaves. Stir and refrigerate. Serve in a big glass with lots of ice and top off with a splash of soda. The longer you let it sit, the boozier the fruit. I'm drinking the final bit right now and can vouch for its potency.
