I don't know about you but my mornings are pretty hectic. I know, I know, I shouldn't complain, it's not as though I have a brood of children to see off to school but yet still they feel rushed. I'll take partial responsibility as some of it is my own fault and pushing the limits with my alarm clock more often than not certainly doesn't help. For many years I've kept this manic schedule of getting up late and hurriedly running out the front door, armed only with nothing more than a very large coffee mug. Because of this poor morning routine, I'd find myself famished well before noon. I knew it was time for a change and for awhile I settled into starting out with a daily dose of cereal. I was very content with a petite bowl of Kashi Go Lean, but before long, this started to get old and I found myself craving something new. As the summer months rolled in, the aisles were pleasantly stocked with bold juicy berries. I love berries and tend to keep a steady stock in the fridge when they're in season. I began experimenting with various smoothies to switch it up. I was in heaven, a quick and easy spin in the blender and my power breakfast was served. June and July passed and then one day in August, these gorgeous peaches arrived. Peaches had been available all along, but these caught my eye, I knew they'd be delicious...sweet like candy. As deep as my love for berries go, I'd found a new smoothie that I never expected to fall in love with, the Peachy NanaNut. The mere thought of this smoothie excites me. Initially, I must admit that peaches and peanut butter weren't my first idea to whip up together in a smoothie but what a pleasant surprise this was during the experimentation process. It's definitely one of my favorites at the moment, however, with fall fast approaching I know it'll be that time time again soon to explore new territory. Till then, please go find the sweetest peaches you can and make this one, it's a keeper!
*Note: that you could use a little more peach, banana or peanut butter based on your taste buds, however, the recipe below is the way I prefer it. After it's blended and poured into two glasses, I love to set them in the freezer just a few minutes to get really chilly*
Yields 2 servings
1 chopped ripe peach
1 1/2 frozen bananas
2 heaping tbsp plain Greek yogurt
1 tbsp natural crunchy peanut butter
1 cup water Crushed Ice
How To Add the peaches, yogurt, bananas, peanut butter and handful of crushed ice to a blender. Start the blender and slowly add the water. If you find your smoothie appears a bit too thick add a bit more water.
